I've been having almost a persimmon a day for the past few weeks. They are hands-down my favorite fruit. I'm tempted to make something with them for Thanksgiving, but I can't decide. Persimmon pudding? Chess Pie with Persimmons? Persimmon Bread Pudding? I love them so much just raw that I'm not sure cooking them will enhance the flavor. Also, I want to avoid any recipes that suggest drowning the persimmon flavor in cinnamon and clove.

Some comments from Facebook...

What is the flavor profile? Can you use them raw or make a sauce to top a compatible flavor of cheesecake?

They're too wonderful for just a sauce in my opinion. The typical dessert is persimmon pudding - which I will probably try. Specifically, this recipe: http://www.saltyseattle.com/2010/11/persimmon-pudding-en-sous-vide/

Which type of persimmon do you have, and how are you enjoying them now?

Here in NY we've been getting both Fuyu and Hachiya persimmons. I wait until they're super soft, slice them up and eat. They are my favorite fruit.

I want "Almost a Persimmon a Day" to be the ...third volume of your Proustian memoirs.

I grew up with a persimmon tree in my backyard, and we never ate any persimmons from it. My parents had a friend who loved them and would come and take them. Because we never ate the persimmons, the tree was a terrible nuisance, as it would drop persimmons onto our patio constantly. They made a huge mess. I should try a persimmon now.

Dave, that is the saddest thing I've heard this week. Let that be a lesson to you from here on out that things you find to be a nuisance in life are probably sources of joy if you would only pick them up and taste them.

I don't worry, Ben. Your cookbook is getting used this weekend.

I don't think I've ever had a ripe persimmon and it's made me afraid to ever eat one again.

You have to wait until they're SUPER soft. And then they're like candy.
